A SUSCEPTOR is a packaging material used for its ability to absorb electromagnetic energy. In susceptor food packaging, this energy is delivered to the susceptor material during the microwave cooking cycle.
To enhance certain foods reheated in the microwave oven, susceptors are built into paper packaging structures where they absorb the microwave energy which penetrates the packaging. This absorbtion process raises the temperature of the susceptor to levels where it radiates thermal (infrared) heat energy. The infrared energy is reflected onto the food that is in direct contact with the susceptor, causing a "broiling" type effect (high skin heating). Due to lower absorbtion intensity of infrared frequencies to penetrate foods, vs. microwave frequencies, the best cooking results are seen on the exterior of the food product. Conversion of microwaves to infrared thermal energy is particularly useful for food products which require browning or crisping.
